Prepare all ingredients: thoroughly wash the pork and pat it dry with paper towels. Peel the garlic and onions. Wash the peppers, remove the stems and seeds, so they are ready for slicing.
Cut the pork into neat strips or medium cubes, aiming for pieces about 3 cm thick on each side. This will ensure even cooking and an appealing presentation of the dish.
Slice the onion into thin half-rings so it fries quickly and imparts a delicate aroma to the dish.
Mince the garlic with a press or chop it finely with a knife. Cut the bell pepper into small squares or thin strips so that it harmonizes well with the meat.
Pour vegetable oil into a pot and heat it over high heat. Add the pork and fry, stirring constantly, until a delicious golden crust forms.
Add the chopped onion to the meat. Season with salt and pepper to taste. Reduce the heat to medium and cook for another 2 minutes until the onion is soft and fragrant.
Now it's time to add the sweet pepper, minced garlic, and fragrant cilantro to the saucepan. Stir all the ingredients thoroughly and let them fry for 5 minutes for the flavors to meld together.
Add the chili seeds to a saucepan and incorporate the butter. Set the heat to low, cover with a lid, and simmer the dish for 40 minutes until the meat becomes incredibly tender and infused with all the flavors.
