Defrost the chicken fillet, rinse it thoroughly, and pat it dry. Carefully remove any veins and membranes to ensure the fillet is perfectly clean.
Rub the chicken fillet with vodka, then generously sprinkle spices on all sides. Pour half of the salt into a container, place the chicken, and then pour the remaining salt on top. Close the container tightly with a lid and refrigerate for 2 days to marinate.
After marinating, thoroughly rinse the chicken, then cover it with cold water and let it sit for 2 hours. After this time, pat the fillets dry with a paper towel.
Wrap the chicken in cheesecloth or a bandage and hang it in the refrigerator for 4 days to cure evenly.
Thinly slice the cooked fillet and serve it with crisp lettuce leaves and juicy cherry tomatoes, creating a perfect appetizer.
