I suddenly wanted zucchini pancakes. It was implemented just as quickly because the young zucchinis in the fridge hinted that they would soon stop being young. Tasty and not particularly high in calories.

Grate zucchini on a large grater and leave in a deep vessel to release excess juice (in my case, it stood for 3 hours).
In a deep bowl, shake the eggs, salt and spices with a fork; then sift flour into this mixture and mix well until smooth. Mixer to help me)
Squeeze the juice from the zucchini again; then put all this in a deep bowl with the dough and mix well.
Spread the mixture on a heated pan. Fry on each side for ~3-5 minutes over medium heat until golden brown. I fry in oil, but what I do is soak a paper towel in olive oil and just wipe the pan with it. Less than 1g is used for the whole roasting. I like my fritters flipping so much better.
