Try this wonderful dairy-free lemon curd recipe. You don't need butter to make a bright creamy lemon curd; dairy-free coconut oil will work perfectly.

Fill a medium saucepan 1 inch with water and heat until just barely boiling.
In a glass bowl, whisk together the lemon juice, lemon zest, sugar, egg yolks and salt. Place the bowl over boiling water. Cook, stirring constantly, until foamy and then thickened, about 10 minutes.
Remove the bowl from the boiling water. Gradually whisk in coconut oil until melted and combined.
Strain the curd mass through a fine sieve; remove any solids remaining in the strainer. Press the plastic wrap directly to the surface to prevent a skin from forming. Refrigerate until set and chilled for at least 2 hours.
