Whisk the flour, sugar, baking powder, baking soda, and salt together in a bowl.
Whisk the buttermilk, eggs, and 3 tablespoons oil in a separate bowl until well combined. Pour the wet ingredients into the dry ingredients and mix until combined; the dough may seem a little thick.
Heat the remaining 1 tablespoon oil in a cast-iron skillet over medium-low heat for 5 minutes. Working in batches, pour 1/3 cup of the batter for each pancake into the hot pan. Spoon the dough into circles; cook until bottom is browned and top is bubbling, 1 1/2 to 2 minutes. Flip and cook until the center is set and the other side is browned, about 2 minutes more.
Use fewer cups of flour for more traditional batters and lighter pancakes.
