Put the fish for the tartare in the freezer for 15-20 minutes, it is easier to cut it that way. Chop a quarter of a red sweet onion very finely. Take the fish out of the freezer, cut it into very small cubes. Put the fish and onion in such a bowl that it is convenient to interfere. Add mustard (you can use Dijon), Worcestershire sauce and salt to taste. Cover with film and put in the refrigerator to marinate. You can eat in half an hour. Very tasty with avocado, or put on toast spread with ricotta or cheese.
