Pour the yogurt mixture into a strainer lined with cheesecloth. Place the strainer and draining bowl in the refrigerator until all the liquid has drained, which is 1-2 days. Empty the drain bowl from time to time so you can tell when the cheese has stopped draining.
Put the cheese in a closed container; store in the refrigerator for up to 2 weeks.
