Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone non-stick mat larger than the baking sheet to prevent juices from spilling onto the baking sheet.
Combine strawberries, 1/4 cup sugar, and balsamic vinegar in a bowl; toss gently to coat. Transfer to a baking sheet, scraping the bowl with a spatula to make sure all the liquid is incorporated.
Bake in a preheated oven for 30 minutes. Remove from the oven and set aside to cool for about 30 minutes.
Transfer the cooled strawberries and all the juice to the bowl of a food processor. Add remaining 1/4 cup sugar and cream; mix until smooth.
Pour the strawberry mixture into an ice cream maker and freeze according to the manufacturer's instructions until it reaches the creamy texture of ice cream, 40 to 45 minutes. Serve immediately.
