Place all the ingredients in the blender bowl, except for the oil for frying: 180 g of flour, 2 eggs, 200 ml of kefir, 1 tbsp. oil, ½ tsp. baking powder, ¼ tsp. salt and 150 g of spinach. If using frozen, thaw it a little and squeeze out excess moisture. Beat the ingredients until the dough is smooth.
Pour 30 ml of oil into a large frying pan and heat it. Spread the fritters with a spoon and fry for 2-3 minutes on each side until lightly crusted.
Serve ready pancakes with sour cream or another sauce. They also taste good cold, so you can put them in your school or office lunchbox.
