Cut the ham into bite-sized pieces, and cut the cherry tomatoes in half. Grate the cheese on a coarse grater2
Heat a frying pan over medium heat, add vegetable oil and butter. Fry the ham for a couple of minutes, stirring, then add the tomatoes and fry for another couple of minutes.
Carefully break the eggs into the pan, leaving a little space for them. Salt and pepper. Cook over low heat until the whites are set and the yolks are runny. Do not cover the pan with a lid.
