Serves:
Mutton - 1 kg
White cabbage - 1 kg
Flour - 1 tbsp
Salt - to taste
Black pepper - 2 tsp

Coarsely chop the lamb and cabbage. Dust the meat with flour.

Grind garlic, salt, pepper, and bay leaf in a mortar. Add oil and stir thoroughly. Rub the resulting mixture onto the knuckle.

Mix a little tkemali sauce with mustard and coat a piece of shank. Ideally, leave the shank to marinate in this form for 2 hours (or even better, overnight), but you can cook it right away.

Place the shank in a baking sleeve and place it in an oven preheated to 100 degrees. At this temperature, cook the meat for half an hour, then increase the temperature to 200-220 degrees and cook for another hour and a half.
