Refreshing okroshka with kvass, sausage, vegetables, and fresh herbs is perfect for hot days! The base of boiled potatoes, eggs, and sausage provides the dish's nutritional value, crispy cucumbers and herbs add freshness, and the cold kvass dressing pleasantly cools. Wash the potatoes, peel them, and boil them until tender in salted water. For more aromatic vegetables, add a bay leaf and a few allspice peas to the water. Cool the potatoes to room temperature, cut them into small cubes.
Boil chicken eggs until hard-boiled, cool in cold water, peel, dice.
Peel the boiled sausage and cut it into cubes of the same size as the other ingredients. For okroshka, doctor's, milk, or children's sausage of the highest quality from a trusted manufacturer is best. If desired, the sausage can be replaced with ham, boiled chicken fillet, beef, or tongue.
Fresh cucumbers wash, cut off the tails, cut into small cubes. If the vegetables are young, they can not be peeled beforehand.

Wash the green onion feathers, cut into thin rings, transfer to a deep bowl, add salt. Mash the onion with salt with a pestle to make it release juice. Wash the dill and parsley, dry from excess moisture, finely chop.
In portioned plates, mix chopped vegetables, boiled sausage, eggs, and herbs. Adjust the amount of each ingredient to your taste.
Fill the ingredients with cold kvass. Salt the okroshka to taste, season with black pepper, add sour cream and mustard. Stir the okroshka and invite your family to the table.
