Process the chicken so that you get two breast fillets together with the shoulder bone on the leg. Remove the skin. Put the fillet with the inner side up, cut from the middle along both sides, put the halves so that the filling fits, and carefully beat them off. Pour oil into the frying pan and heat it to 200 degrees. Heat the oven to 200 degrees. Deep-fry the cutlets until golden brown (about 5 minutes), then cook in the oven for 10 minutes. Wipe with a napkin before serving.
