How to cook classic homemade beef jelly with gelatin? First, prepare the necessary ingredients according to the list. You can replace the beef shoulder with another part of the carcass, for example, hip, neck, etc.
Cut the celery root in half.
Wash the meat, separate it from the bones. Place the beef bones, peeled onions, carrots and celery in a saucepan. Add allspice and garlic. Pour water. Bring the broth to a boil and cook at a low boil, skimming the foam for about 1 hour.
30 minutes after the start of cooking, add sprigs of dill, parsley and salt to the broth.
While the broth is cooking, cut the beef into large pieces.
Put the meat in a foil-lined baking dish and put it in an oven heated to 180 ° C. Bake for about 50 minutes or longer until done. The exact time depends on your oven, the size of the meat pieces and the selected part of the carcass. To prevent the meat from drying out, it is better to first tighten the form with foil. If you wish, you can not bake the meat, but boil it together with vegetables until ready in 3 liters of water for 1.5-2 hours until soft.
Add 100 ml of cold water to the gelatin and let it swell for 10 minutes.
Strain the broth and return to medium heat.
Pour the swollen gelatin into a saucepan with hot broth and stir until completely dissolved. Do not bring to a boil.
Pour a thin layer of broth with gelatin into jelly molds and put it to harden in the refrigerator for 2 hours.
Cut the baked beef into small pieces or separate it into fibers with your hands. If you wish, you can salt the meat and pepper it.
Spread the meat on top of the congealed broth. Pour the remaining broth on top. If desired, decorate the jelly with boiled carrots. Put the beef jelly in the refrigerator for 6-8 hours until it solidifies completely. Bon Appetit!
