Chicken thigh, cleaned and without skin, cut into cubes with a side of 5-7 cm. Season with salt and pepper.
Cut the onion into half rings 0.5-1 cm thick and add to the meat. Add vegetable oil, mix everything thoroughly. Pour in sparkling water, stir and leave to marinate for at least 2 hours.
Separate the meat from the onion. Thread the meat onto skewers and fry the kebabs on the grill or in a grill pan. Serve sprinkled with chopped herbs and pita bread.
