Remove excess moisture from the fish with paper towels; salt, pepper, add dried rosemary and sprinkle with lemon juice. Leave for 20-25 minutes.
Mix one egg and mayonnaise in a cup - mix with a mixer until a homogeneous mass and continue for 3 minutes; gradually sift flour, continuing to mix the mass. You can salt or add spices (remember that the fish is already salted and seasoned). Leave the batter in the refrigerator for 15-20 minutes.
Heat a frying pan, grease it with oil (I only found olive oil); dip the pieces in the batter and put them on the pan. Fry on each side for 5 minutes, and watch the batter so that it remains ruddy, but not fried ☺️ Bon appetit)
