A simple, hearty, and tasty quick snack. Eggplants with walnuts and garlic will make a great vegetable addition to meat and fish dishes. Alternatively, they can decorate a festive table. They are very easy to make. A good snack both hot and cold.

How to fry eggplants with walnuts and garlic? First, prepare the products according to the list. Choose spices according to your taste, I took Caucasian herbs. Also, take any greens, dill, cilantro or parsley will do.
Wash the eggplants well, cut them into rings and sprinkle with salt to remove the bitterness, leave for about 10 minutes. Cut them into slices if you want to make eggplant rolls, or if you prefer this way of slicing. Determine the thickness of the slices to your own taste. Optimal from 7 mm.
Rinse the eggplants with cold water from the salt and dry them with a towel.
Mix eggplants with salt, pepper and herbs, leave for 5 minutes.
Put the eggplants in a heated pan with oil, fry on medium heat until golden brown.
Then turn over to the other side and fry until cooked for about 2-3 minutes.
Place the fried eggplants on a paper towel to absorb excess oil.
Grind the walnuts with a blender.
Peel the garlic, wash it with water and chop it, then combine it with nuts in a bowl.
Wash and dry the greens (I took parsley) well, chop finely.
Add greens to nuts and garlic, mix.
Distribute the resulting mixture on fried eggplants, serve cold as an appetizer. Bon appetit!
