Today I will tell you a quick and easy recipe for making Korean-style carrots. The appetizer turns out to be very juicy, aromatic, and moderately spicy. The amount of spices and garlic can be adjusted to your taste. Coriander gives the appetizer a characteristic nutty-spicy note, and paprika – a slight smoky aroma. Additional ingredients for Korean-style carrots are sugar and apple cider vinegar, which give the vegetables a slight sweet and sour note. Delicious Korean-style carrots can be served as a cold appetizer or used for making salads, rolls, and other dishes.

Serves:
Carrot - 1 kg
Onion - 1 pc
Garlic - 6 clove
Water - 100 ml
Apple cider vinegar 6% - 50 ml
Refined sunflower oil - 75 ml
Sugar - 30 g
Salt - 10 g
Sesame - 20 g
ground coriander - 1 tsp
Smoked ground paprika - ½ tsp
Ground black pepper - 0.3 tsp
Bay leaf - 2 pc
Allspice - 3 pc
Seasoning Mix of peppers - ½ tsp
Coriander seeds - ½ tsp

Wash the carrots thoroughly. Use a vegetable peeler to remove the skin from the vegetables.

Grate the carrots using a Korean-style vegetable grater. Transfer the grated vegetables to a deep dish.

Peel the onion, slice it into half-rings. Place the vegetables in a skillet with heated oil. Stirring, fry the vegetables until golden brown.

Add garlic pressed through a garlic press to the grated carrot. Sprinkle with ground coriander, black pepper, and smoked paprika.

Pour sunflower oil, in which the onion was fried, over the garlic and spices, straining it through a sieve.

To prepare the marinade, mix salt, sugar, allspice, coriander seeds, bay leaves, and a mixture of peppercorns in a pot.

Pour in the water and apple 6% vinegar. Stir, bring the marinade to a boil.

Add the hot marinade to the bowl with carrots. Thoroughly mix all the ingredients so that the carrots are completely coated with the marinade and spices.

Dry the sesame seeds in a skillet until golden.

Add fried sesame to the appetizer and mix.

Cover the dish with a lid or cling film and place the appetizer in the refrigerator for 3-4 hours. During this time, the vegetables will soak in the marinade and become spicy and flavorful. Store the ready Korean-style carrots in the marinade in a glass container on the refrigerator shelf.
