Prepare appetizing mackerel rolls with hard cheese and vegetables for the festive table. The result is a very tasty and beautiful dish that can be prepared in advance, saving you a lot of time! For the roll filling, you can use your favorite ingredients: fried mushrooms, boiled eggs, vegetables, greens, various types of cheese, and olives. In this recipe, we will use sautéed vegetables and hard cheese. They pair wonderfully with the fatty mackerel, giving the dish a spicy touch. Such an original and spectacular appetizer will definitely appeal to all fish dish enthusiasts.

Serves:
Frozen mackerel - 2 pc
bell pepper - 1 pc
Carrot - 1 pc
Onion - 1 pc
Hard cheese - 100 g
Vegetable oil - 50 ml
Lemon juice - 25 ml
Salt - 1 tsp
Seasoning for fish - 1 tsp
Ground black pepper - 0.3 tsp
Fresh parsley - 1 bunch

Defrost the frozen mackerel in advance at room temperature.

Wash the fish, cut off the head, tail, and fins. Remove the entrails and the black film inside the belly. Wash again and dry the fish with paper towels. Using a sharp knife, carefully cut the fillet from the backbone, and remove all small bones with tweezers. Salt the fillet halves, season with spices, and drizzle with lemon juice. Let the mackerel marinate at room temperature for 20 minutes.

Prepare the filling for the rolls. Peel the onion, cut it into small cubes. Wash the bell pepper, cut it in half, remove the seeds. Cut the pepper into small cubes. Wash the carrot, peel it, grate it.

Place the vegetables in a pan with heated oil. Stirring, sauté the onions with carrots and bell peppers over low heat until soft. Cool the vegetables to room temperature.

Grate the hard cheese into fine shavings. Evenly distribute it over the marinated mackerel fillet.

Place a small amount of vegetable filling on the wide part of the fish.

Wrap the fillet into a roll, moving from the wide part to the narrow one, so that the filling ends up inside each portion of the fish. Secure the blanks with wooden toothpicks. Place the rolls in a baking dish greased with oil.

Without covering the dish with a lid, bake the mackerel rolls in a preheated oven at 180 degrees for 30 minutes.

When the mackerel rolls stuffed with vegetables and hard cheese are ready, carefully remove the toothpicks. Serve the dish warm or chilled, it's delicious either way!
