A simple and quick recipe for juicy and spicy marinated mushrooms is especially relevant on the eve of the New Year's holidays. Champignons marinated with this recipe are significantly different in taste and aroma from mushrooms purchased at the supermarket. Spicy champignons can be served as a cold appetizer with roasted or grilled meat, chicken, or a potato side dish. The mushrooms can be used for making festive salads and various appetizers. Marinated champignons can be stored in the refrigerator for 1-2 weeks, so they can be prepared in advance.

Serves:
Fresh champignons - 500 g
Carrot - ½ pc
Onion - ½ pc
Garlic - 3 clove
Salt - 1 tsp
Sugar - 2 tsp
Allspice - 3 pc
Seasoning Mix of peppers - ½ tsp
Coriander seeds - ½ tsp
Bay leaf - 2 pc
Water - 250 ml
Refined sunflower oil - 30 ml
Apple cider vinegar 6% - 30 ml
Dill fresh - ½ bunch

For the recipe, use mushrooms of the same size so that they marinate evenly. Wash fresh champignons, clean the mushroom caps, and if necessary, trim the dirty bases of the stems.

Peel half of the carrots and onions, cut into half rings. Slice the peeled garlic cloves into plates.

In a deep frying pan, combine salt, sugar, spices, and sprigs of dill for aroma. If desired, you can add cilantro, celery leaves, or parsley.

Pour in room temperature water, oil, and 6% apple cider vinegar.

Put the chopped vegetables in the pan. Stir and bring the marinade to a boil.

Place fresh mushrooms in the pan. Initially, the marinade will not completely cover the mushrooms, which is fine. During cooking, the mushrooms will significantly reduce in size, release liquid, and be completely covered by the marinade.

Cover the pan with a lid and simmer the mushrooms over low heat for 10 minutes. Stir the ingredients several times during cooking to ensure the mushrooms cook evenly.

After 10 minutes, remove the pan from the heat. Leave the mushrooms to cool in the pan under the lid for 30 minutes. Then transfer the mushrooms along with the vegetables, spices, and marinade into a glass container.

Hermetically seal the snack with a lid, place the mushrooms in the refrigerator for 1-2 hours.

After the specified time, incredibly tasty, juicy, and spicy mushrooms can be served. Enjoy your meal!
