Prepare the avocado by removing the skin and pit. In a blender or with a fork, turn the pulp into a smooth puree. Then mix it with sour cream and lemon juice to create an airy mousse.
Dip the tomato in boiling water briefly to easily remove the skin. Remove the seeds and dice the flesh into small cubes. This is called tomato concasse.
