Prepare the ingredients for a delicious beef liver. Thoroughly rinse the liver and remove all films and ducts so that it turns out incredibly tender after frying.
Cut the liver into appetizing strips. Peel the onion and cut it into thin half-rings. Heat vegetable oil in a frying pan and fry the onion until a delicate golden hue (about 5 minutes over medium heat).
Add the sliced liver to the onions in the pan. Fry, gently stirring with a spatula, for about 7 minutes over medium heat. Make sure the pieces of liver do not burn, keeping them tender and juicy!
Add sour cream to the liver and onions. Peel the garlic, press it directly into the sour cream. Add salt and pepper, and mix gently. Simmer uncovered over medium heat for 5 minutes, allowing the flavors to develop.
Leave the liver in sour cream under the lid for another 5 minutes to soak it with the aromas. Then serve, arranging on individual plates and generously sprinkling with chopped herbs. Enjoy this delicious dish with mashed potatoes or boiled rice.
