Carefully roll the part smeared with jam into a roll, so that the strips of dough are on top. In this way, each bun will be decorated with a unique pattern.
Grease the surface of the buns with water, then dip each one in coconut flakes so that it evenly covers the top. Place the buns in the mold: 2 buns on the short side and 4 on the long side.
Leave the prepared buns to proof for 60-75 minutes at a temperature of 24-26C. Preheat the oven to 180C and bake the buns for 20-25 minutes, until golden brown.
Let the finished buns cool in the pan on a wire rack for 15 minutes. Then gently turn them out onto a kitchen towel, and then back onto a board. Enjoy warm, fragrant buns with raspberry jam and coconut!
Combine all the ingredients for the starter and thoroughly knead a stiff dough. Transfer it to a bowl, cover gently, and allow time to ferment at room temperature for 6-8 hours. Watch the dough come to life and energy!
In a large bowl, combine the sponge with all the remaining dough ingredients, except for the butter. Turn this mixture into a smooth and elastic dough, kneading it thoroughly until the perfect texture is achieved.
Gently incorporate the butter, adding it gradually, in three additions. Knead the dough until it is smooth and shiny, like silk. Transfer the dough to a bowl, cover, and leave to proof for 2 hours at an optimal temperature of 24-26C. In the middle of the proofing process, don't forget to punch down the dough.
Divide the dough into 8 equal parts, gently roll each part into a ball, cover and let them "rest" for 15 minutes. Let each ball gather strength before the next stage!
To prepare the filling, mix raspberry jam with delicate shredded coconut to create the perfect flavor combination. Grease a 20x30 cm baking dish with butter. Prepare a wide bowl with shredded coconut.
Roll out each portion of dough into a narrow rectangle about 5 mm thick. Generously spread filling on 2/3 of the rectangle, and cut the remaining third into strips about 5 mm wide.
