Prepare the dough ingredients. Transfer the butter, cut into cubes, to a heat-resistant bowl and leave at room temperature for half an hour. Then add sugar and rub thoroughly with a spoon to form a homogeneous, creamy mass.
Bake the crumble apricot pie for about 30 minutes at a moderate temperature, until lightly browned. Before removing from the pan, let the pastry cool completely at room temperature so that the pie holds its shape better.
Sift the flour for the dough into a separate bowl through a sieve to saturate it with oxygen. Add the remaining regular sugar, vanilla sugar, and baking powder. Mix thoroughly with a whisk or spatula until smooth.
Add the softened butter to the flour mixture. Rub it in with your fingers until you get fine crumbs, being careful not to overheat the butter. Pour two-thirds of the resulting crumbs into a baking pan lined with baking paper and spread evenly.
Wash and dry the apricots thoroughly, then divide them in half, removing the pits. Cut the flesh into small cubes and place in a separate bowl. Sprinkle with 70 g of sugar and leave until ready to use so that the apricots release their juice.
Evenly distribute the finely chopped apricots in sugar on top, ensuring even coverage. Cover everything with the remaining crumbs and gently smooth them out with a silicone spatula, creating a beautiful top layer.
