Lay the dough on a floured surface and roll it out into a round circle. Place the meat filling in the center. Carefully lift the edges of the dough over the filling and join them together to form a pouch.
Carefully roll out the resulting ball into a thick patty. Make a small hole in the center for steam to escape. Bake for 10 minutes at a high temperature (250°C). Brush the finished pie with melted butter on both sides to make it shine and acquire a unique aroma.
Start your journey into the world of Ossetian cuisine by preparing the dough for the pie. In a bowl, combine the yeast and sugar. Heat the milk and water to a pleasant temperature (no higher than 28°C), pour over the yeast, and leave for a while to let it come to life.
Sift the flour with salt through a sieve to make it airy. Melt the butter and let it cool slightly. Combine the yeast mixture with the butter, gradually adding the flour. Knead a soft, pliable dough and let it rest under a towel for about an hour.
Prepare a filling that will fill your pie with aroma! Wash the meat, dry it, cut it into large pieces, and grind it in a meat grinder. Place the minced meat in a spacious bowl.
Clean the onion and garlic, chop finely and mix with the ground meat. Season with salt and pepper to your taste and let it sit in a cool place for about 15 minutes to allow the flavors to blend.
