Begin by preparing the cottage cheese for the paskha. Take approximately 1.7–1.8 kg of cottage cheese and place it in a colander, which has been pre-lined with two layers of cheesecloth. Carefully cover the cottage cheese with the overhanging edges of the cheesecloth. Place a weight of about 1.5 kg on top. Leave the cottage cheese in a cool place for 4–6 hours to allow excess moisture to drain.
Ensure you have 1.5 kg of finished cottage cheese. Pass it through a sieve into a deep bowl to achieve a smooth, uniform consistency. Add regular and vanilla sugar, eggs, and softened butter. Thoroughly blend all ingredients until smooth. Then, add 100–120 g of pine nuts and mix well. Pour in the cream and gently stir again.
Place the curd mixture into a special paskha mold, previously lined with two layers of cheesecloth and set over a bowl to collect excess liquid. Cover the mixture with the overhanging edges of the cheesecloth. Place a 1.5 kg weight on top. Refrigerate the mold for 10–12 hours. After this time, carefully invert the paskha onto a plate, remove the mold and cheesecloth. Decorate the finished dish with the remaining nuts.
