Cut the meat into small pieces, then mince it twice along with the lamb fat. Peel the onion, finely dice it, and thoroughly mix it with the minced meat. Add salt, pepper, and fresh herbs. Knead the mixture well and refrigerate it for 30 minutes to let it set.
From the prepared minced meat, form neat sausages 13–15 cm long. Skewer each sausage and fry in well-heated vegetable oil on all sides until a delicious golden-brown crust forms.
To prepare the sauce, combine natural yogurt with kefir and finely chopped parsley. Season with salt and pepper to taste. Serve the hot, aromatic kebabs with this refreshing sauce.
