Prepare all ingredients: wash the vegetables thoroughly, peel the carrots. If you plan to add garlic, peel off its skin. Rinse and dry the fresh herbs.
Grate the carrots and cucumber using a special grater for Korean carrots. Transfer the grated vegetables to a salad bowl.
In a separate small bowl, combine the vegetable oil, soy sauce, salt, pepper, and sugar. Press the garlic through a press and add it to the dressing. Pour in the vinegar. Thoroughly mix all the dressing ingredients and pour it over the salad.
Finely chop the fresh herbs and add them to the salad. Mix all ingredients thoroughly. Cover the salad bowl with plastic wrap and refrigerate for at least 30 minutes to allow the vegetables to marinate well in the dressing.
Serve this refreshing salad in clear dessert bowls, garnishing it with delicate microgreens for an elegant presentation.
