Prepare all ingredients: thoroughly wash and peel the garlic and carrots. Measure out the required amount of aromatic seasonings and spices. Get ready a special grater for Korean carrots, a garlic press, a small saucepan, as well as a convenient deep bowl for marinating and plastic wrap.
Grate the carrots using a special grater to create long, elegant julienne strips.
Transfer the grated carrots to a bowl, sprinkle with salt, and vigorously knead with your hands until the root vegetable begins to release its juice.
Press the garlic cloves, add them to the carrots, and mix thoroughly to combine the flavors.
Pour sunflower oil into a saucepan and gently warm it over medium heat until it's warm and ready for the spices.
Add ground coriander, hot red pepper, and seasoning for Korean-style carrots to the heated oil. Stir quickly and heat everything together for 10-15 seconds to allow the spices to release their aroma. Remove the saucepan from the heat.
Carefully pour hot, fragrant oil over the grated carrots and garlic. Mix thoroughly to ensure every carrot strand is coated with the oil dressing. Add sugar, ground black pepper, and vinegar. Stir well once more, then cover the bowl with plastic wrap and refrigerate the carrots for 2-3 hours to allow them to marinate completely and develop their unique flavor.
Serve this delicious Korean carrot salad, garnished with bright rings of pickled jalapeño peppers for extra zest and aesthetic appeal.
