Prepare all the ingredients: peel the pumpkin and remove the seeds, peel the onion and garlic, and thoroughly wash and clean the carrots. Measure out the required amount of the remaining ingredients. Don't forget to get your immersion blender ready; you'll need it soon!
Begin by finely dicing the onion and garlic, and grating the carrot. Heat a pan with vegetable oil and sauté the prepared vegetables until golden brown. Next, cut the pumpkin into small cubes and add it to the pan with butter, along with the other vegetables. Sauté everything together for about 5 minutes, allowing the pumpkin to soften slightly and absorb the flavors.
Pour enough water into the pan to completely cover the vegetables. Add salt and pepper to taste. Bring to a boil, then remove from heat and puree the mixture with an immersion blender until perfectly smooth. Pour in the cream and bring the soup to a boil again, but do not let it boil. Remove from heat immediately.
