Prepare the fish: thaw, rinse thoroughly, clean, and pat dry. Remove the head, guts, and fins. Peel the onion and carrots.
Divide the pollock into 4 equal serving pieces. Generously salt each piece, season with freshly ground black pepper and your favorite fish seasoning.
Dredge each piece of fish in flour, then pan-fry in vegetable oil for 3 minutes on each side over medium heat until golden brown.
Slice the onion into thin half-rings and place them over the fried fish. Grate the carrots and spread them over the onions. Pour milk over everything and simmer on low heat for 20 minutes, allowing the fish to absorb the flavors and become incredibly tender.
Serve the fragrant pollock with onions and carrots, accompanied by a side of boiled rice. To add a touch of spice to the dish, season it with a blend of peppers.
