Thoroughly wash the liver and chanterelles. Peel the onion.
Slice the liver into small pieces and place them in a pan with one tablespoon of vegetable oil. Sauté over medium heat until the liver changes color.
Meanwhile, in a separate pan, sauté the onions and chanterelles in the remaining hot oil until tender and all liquid has evaporated. This process will take approximately 20–25 minutes. Remember to stir occasionally to ensure even cooking.
Add the fried liver to the mushrooms and onions. Pour in the cream. Simmer, covered, over low heat for 10 minutes to allow all the flavors to meld together harmoniously.
Grate the cheese finely. Add it to the pan along with the salt. Heat the dish for another 3-4 minutes until the cheese melts and gives the dish a delicate creamy texture.
Serve the aromatic chanterelles with chicken liver, complementing the portion with delicate mashed potatoes and sprinkling with fresh herbs for brightness and freshness.
