Georgian solyanka is more than just a soup; it's a truly aromatic stew, prepared with care and an abundance of spices. Unlike the familiar Russian solyanka, this version contains no sausages or frankfurters. Instead, it features tender beef, braised in a rich sauce with wine, mustard, tomato paste, and fresh herbs. This dish will surprise you with its profound flavor and comforting aroma, making it perfect for a cozy dinner.

Salted cucumbers - 1 pcs.
Premium grade wheat flour - 1 tbsp.
Bouillon - 2.5 glass
White wine - 1.5 tbsp.
Bay leaf - 1 pcs.
Mustard - ½ tbsp.
tomato paste - ½ tbsp.
Fresh herbs (basil, parsley, mint, tarragon) - to taste
Vegetable oil 2 tbsp. l. - 1 tbsp.
Salt - to taste
Ground black pepper - to taste
Hot red pepper - to taste

Start with preparation: thoroughly wash and dry the fresh herbs. Then, peel the onion and garlic so they are ready for further use.
Cut the beef into medium-sized pieces. Heat a frying pan with vegetable oil and add the meat. Fry, stirring constantly, over high heat for 4 minutes until golden brown.
Slice the onion into half-rings and finely mince the garlic. Add them to the beef in the pan. Sauté, stirring, for another 3 minutes. Then sprinkle in the flour and mix thoroughly to ensure it's evenly distributed.
Pour the white wine into the pan. Stir the contents for a couple of minutes, then add the tomato paste and mustard. Mix everything thoroughly to combine the ingredients.
Finely chop the prepared herbs. Add them to the pan along with salt, red and black peppers. Place the bay leaf in there as well to give the dish a rich aroma.
Thoroughly mix all the contents of the pan. Pour in the broth. Set to low heat and simmer the dish until the beef is absolutely tender and soft.
Once the meat is tender, thinly slice the pickled cucumber into strips and add it to the pan. Stir and simmer for another 7 minutes to allow the cucumber to infuse its flavor into the dish.
Serve the prepared Georgian solyanka into individual bowls. Accompany it with fresh bread and a generous sprinkle of herbs. If desired, you can serve any side dish of your choice with the solyanka.
