Begin by thoroughly preparing the ingredients: wash all the greens, cucumbers, and radishes, then carefully pat them dry with a paper towel. Don't forget to prepare a convenient wide-mouthed container in which you will serve or take your okroshka with you.
Carefully peel the skin from the radishes and cucumbers, then grate them finely to achieve a delicate texture.
Finely chop the fragrant leaves of cilantro, mint, tarragon, as well as green onions and dill. Transfer the chopped herbs and vegetables to a separate bowl, add salt, and mix thoroughly. To enhance the aroma and tenderness, you can lightly mash them with a pestle. Then, transfer this aromatic base for okroshka into a prepared wide-mouthed container.
Combine the matsoni with water, then pour this mixture into the bottle. Place the okroshka in the refrigerator for at least 1 hour to chill and infuse thoroughly. Serve this refreshing soup in glasses, or take it with you on a picnic or walk, enjoying its taste anywhere!
For extra freshness and visual appeal, add ice cubes to your okroshka. You can prepare them in advance by freezing water with finely chopped herbs in molds. This "green ice" is perfect not only for cold soups but also for summer cocktails, adding a unique charm and aroma.
