Pour the cream into a shallow saucepan and place it on the heat. As soon as an appetizing foam appears on the surface of the cream, carefully skim it off and set it aside in a separate dish. Continue to skim the foam until the volume of the cream is reduced by half, concentrating its flavor and aroma.
Into the remaining, now thicker cream, slowly pour in the semolina in a thin stream, stirring constantly to prevent lumps. Cook for only half a minute, allowing the semolina to swell slightly.
Now, add sugar, tender butter, and the previously skimmed foam to the porridge, which will give the dish a special zest. Mix all ingredients thoroughly. Preheat the oven to 175°C. Distribute the fragrant porridge into individual molds and bake in the oven for 5–6 minutes until an appetizing golden crust forms.
