Bring 2.5 liters of water to a boil in a large pot and season with salt. Carefully lower the dumplings into the boiling water and bring back to a vigorous boil. Once the dumplings float to the surface, reduce the heat to medium and cook for another 6–7 minutes. Drain the cooked dumplings in a colander, then transfer them to plates, drizzle with melted butter, and serve immediately with sour cream.
Begin by preparing the perfect dough. In a spacious bowl, combine the flour with salt, then gradually pour in 250–280 ml of warm water. Knead into an elastic and pliable dough, form it into a ball, wrap it in plastic film, and let it rest for 30 minutes.
Flour your work surface, take out the rested dough, and knead it thoroughly once more. Form the dough into ropes about 2 cm thick, then cut them into small pieces. Roll each piece of dough into a thin circle, place about 1 tablespoon of filling in the center, and carefully but firmly pinch the edges together to form a dumpling. Place the finished dumplings on a floured board or one lined with parchment paper.
Proceed to create the flavorful potato filling. Boil the potatoes in salted water until tender, then drain and mash them into a smooth puree. Dice the bacon into small pieces and finely chop the onion. Heat olive oil in a non-stick skillet and fry the bacon until golden and crispy, which will take about 5 minutes. Using a slotted spoon, transfer the bacon to a plate. Add the chopped onion to the same skillet and sauté until light golden, approximately 5 minutes. Combine the sautéed onion, along with the remaining fat from the skillet, with the mashed potatoes, add the crispy bacon, and mix thoroughly. Allow the filling to cool to room temperature.
