Begin by preparing the ingredients: thoroughly rinse the chicken drumsticks, peel the onion and carrots, and wash the fresh parsley. Don't forget to rinse the pearl barley well and soak it in hot water for 2 hours to ensure it becomes soft and tender.
Prepare a fragrant chicken broth: cook chicken thighs with peppercorns and bay leaves. After 50 minutes, strain the broth to make it clear, and separate the meat from the bones. In a separate pot, boil the soaked pearl barley for 30 minutes until tender.
Create a golden sauté: julienne the carrots and onions, then fry them over medium heat for 5 minutes until softened. Add the diced pickled cucumbers and tomato paste, and simmer everything together over low heat for another 5 minutes to allow the flavors to meld harmoniously.
Finish cooking: add the meat and boiled pearl barley to the boiling chicken broth. After 10 minutes, stir in the aromatic sauté and pour in the brine. Season with salt and pepper to taste, then simmer for another 10 minutes to allow all the ingredients to meld their flavors and aromas.
Serve this wonderful rassolnik hot, accompanied by a slice of fresh black bread. Don't forget to generously sprinkle each portion with fresh herbs to add vibrancy and freshness to the dish.
