Preparation steps

1

Step 1

Gather all the necessary ingredients. Ensure the cottage cheese is dry; this is key to a perfect casserole. If the cottage cheese is wet, place it in cheesecloth, then in a colander over a bowl, and leave it under a press (about 1 kg) for 3-4 hours. This will allow excess whey to drain, and the cottage cheese will become perfectly dry.

2

Step 2

In a separate bowl, combine the semolina with hot milk and mix thoroughly. Let the mixture sit for 15 minutes to allow the semolina to swell properly. Meanwhile, mash the cottage cheese. Beat the eggs with salt, regular sugar, and vanilla sugar until fluffy.

3

Step 3

Gently rinse the fresh raspberries, remove the stems, and pat the berries dry on a paper towel. Spread the raspberries on a board and lightly dust them with flour, so that each berry is "powdered."

4

Step 4

Pour the egg mixture into the cottage cheese and blend with an immersion blender until smooth. Then add the swollen semolina and mix thoroughly. Grease a baking dish (approximately 20x30 cm) with butter.

5

Step 5

Spread the curd mixture into the prepared pan and distribute it evenly. Carefully arrange the raspberries on top, gently pressing them into the curd mixture. Preheat the oven to 160 °C.

6

Step 6

Place the casserole dish on the middle rack of the oven and bake for approximately 35 minutes. The casserole should develop a golden-brown crust and its texture should become firm. Remove the finished dish from the oven and let it cool for 15 minutes. Serve garnished with fresh raspberries and dusted with powdered sugar.

Enjoy your meal!
