Combine apple cider vinegar, extra virgin olive oil, honey, Dijon mustard, salt, and white pepper in a small container with a lid. Close the lid tightly and shake until completely mixed. Set aside.
Put the lettuce leaves in a salad bowl. Sprinkle with toasted walnut pieces and cheese crumbs. Spread pear slices with a fan on top of the salad, sprinkle with pomegranate seeds and chopped shallots.
Drizzle with vinaigrette and serve.
