I will show you my take on the gin and tonic, the most refreshing cocktail for hot weather. Made in the style invented by chefs from the Basque region in Spain, the whole idea is to add things to the glass to make the flavors that already taste great in gin even more amazing. I encourage you to try several different gins and choose your own garnishes.

Fill a large red wine glass almost to the top with fresh ice.

Add whole spices to the glass. These should be chosen to complement the botanical components of the gin, and some common options include juniper berries, peppercorns, star anise, cardamom pods, cloves, and cinnamon sticks. For a more pronounced taste, whole spices can be "crushed" by pressing with your fingers or a flat knife before adding.

Pour in the gin. Then pour the tonic very slowly and carefully so as not to lose the carbonation. For best results, use a Mediterranean-style tonic instead of the classic Indian style, as they tend to be less bitter and often include flavorings like rosemary and lemon.

Add slices and/or zest from the citrus fruit(s) of your choice. Use a cocktail shaker or spoon to gently push the ingredients down and stir the drink. Do not stir vigorously!

Insert sprigs of fresh grass. Common options are basil, thyme, mint, rosemary, or tarragon. For a stronger, more aromatic effect, pat the herbs between your palms or squeeze between your fingers to activate the essential oils.

Serve 3-5 minutes after mixing to give the drink time to cool down.
