Chicken egg - 300 g
Sugar - 200 g
Wheat flour - 150 g
cocoa powder - 30 g
Dark chocolate (70-85% cocoa) - 300 g
Neutral gel - 200 g
Vegetable cream - 500 g
Cream 35% (fatty) - 150 g
milk chocolate - 400 g
Cognac - 15 g
Sheet gelatin - 15 g
Chicken egg (yolk dry) - 80 g
Strawberry - 150 g

For the biscuit, beat the eggs with the sugar until stiff and frothy. Mix the flour and cocoa powder and combine with the whisked mixture, stir to combine. Cover a baking tray with parchment. Divide the mixture into 3 parts and shape into a circle. Bake in the oven at 180 - 200 ˚C, 7-10 minutes. Cool the biscuits to room temperature.

For the cream, soak gelatin for 30 minutes in cold water in a ratio of 1:6. Heat the cream to 85 °C, add the gelatin solution and egg yolks, whisk the mixture. Melt the milk chocolate in a water bath to 45 °C, combine with the whipped mixture and stir until smooth. Separately, whip the vegetable whipping cream to a stable foam and add it to the mixture in parts.

Smear the biscuits with cream, add strawberries, place the layers one on top of the other and put in the refrigerator for 1-1,5 h.

For the glaze, melt the dark chocolate in a water bath (t not exceeding 50 ˚C), add the cake coating gel, mix thoroughly. Cover the cooled cake with chocolate glaze.
