From the tender blossoms of boiled cauliflower and juicy green beans comes a tasty and healthy salad. To make the dish more filling, we add boiled eggs and hard cheese, which pair well with the vegetables. The result is a delicious and nutritious dish that can become a full lunch. If desired, mayonnaise can be replaced with thick sour cream or natural yogurt. Such a salad can be prepared all year round, as both cauliflower and beans can be purchased in the frozen section at any time of the year. The taste of the salad can be varied by adding boiled chicken fillet, fresh cucumber, bell pepper, or canned corn.

Cauliflower - 300 g
Green beans - 200 g
Chicken eggs C1 - 2 pc
Hard cheese - 100 g
Mayonnaise Provencal - 50 g
Leek - 20 g
Dill fresh - 20 g
Bay leaf - 1 pc
Allspice - 3 pc
Salt - ½ tsp
Ground black pepper - ⅕ tsp

In a ladle or a small pot, bring water to a boil, immerse the green beans in it. Cook the legumes for 3 minutes, then drain them in a sieve and place them in ice-cold water to preserve the nice green color of the green beans.

Break the cauliflower into small florets, immerse the vegetables in boiling water. Add a pinch of salt, bay leaf, and allspice for aroma. Cook the cauliflower florets for 3 minutes, then drain using a sieve.

In a deep dish, combine the string beans and cauliflower that have cooled to room temperature.

Hard-boil the chicken eggs, cool them in cold water, peel the shells, grate them coarsely, and add them to the salad.

Grate a piece of hard cheese on a large grater, add to the rest of the ingredients.

Wash the dill and green onions, dry off excess moisture, finely chop, add to the salad. Season the ingredients with ground black pepper, salt to taste. Dress the salad with a small amount of mayonnaise.

Thoroughly mix the cauliflower and green bean salad so that all the ingredients combine with each other. Place the finished dish in the refrigerator for 30 minutes to allow the salad to infuse and cool.

Before serving, garnish the delicious and juicy cauliflower salad with a boiled quail egg and dill greens.
