Delicious and hearty salad with chicken fillet, pickled mushrooms, canned corn, and hard cheese will be appreciated by both family and guests. The recipe is simple and quite quick. Chicken fillet can be boiled in advance and stored in broth in the refrigerator to keep the meat juicy. If desired, the chicken breast can be rubbed with spices, wrapped in foil, and then baked in the oven or steamed. The festive salad can be served in portions using a culinary ring, small bowls, or wide glasses.

Chicken eggs C1 - 4 pc
Chicken fillet - 350 g
Canned corn - 300 g
Marinated champignons - 400 g
Hard cheese - 150 g
Mayonnaise Provencal - 100 g
Leek - 1 bunch
Fresh parsley - 1 pc
Bay leaf
Allspice
Salt - ½ tsp
Ground black pepper - ⅕ tsp

Wash the chicken fillet, clean it from films, and boil it until ready in salted water with the addition of bay leaf and allspice. Cool the meat to room temperature in the broth, cut into cubes, and place in a deep salad bowl.

Cut the hard cheese into cubes the same size as the boiled meat, and add it to the salad bowl.

Drain the pickled mushrooms from the marinade, cut them lengthwise into 4 parts, add to the salad.

Hard boil the chicken eggs, cool them in cold water, peel them, and dice them. Add them to the other ingredients.

Rinse the green onion feathers, cut into thin rings. Rinse the parsley, dry off excess moisture, chop finely. Add the greens to the salad.

Drain the canned corn from the marinade, add to the other salad ingredients.

Salt the salad to taste, season with ground black pepper. Dress the salad with a small amount of mayonnaise.

Mix the ingredients until smooth. Place the chicken and mushroom salad in the refrigerator for 1 hour to let it sit.

Serve the ready salad with chicken breast, pickled mushrooms, and corn in a large salad bowl or in portions.

For garnishing the salad, use pickled mushrooms and fresh herbs. Enjoy!
