Prepare a delicious and spicy vegetable appetizer! Quick-pickled "Provencal" cabbage will be an excellent addition to meat or chicken, mashed potatoes, or your favorite porridge. The marinated cabbage comes out crunchy, moderately spicy, with a light garlic aroma. Carrots and colorful bell peppers make the appetizer juicy, vibrant, and appetizing. "Provencal" cabbage keeps well in the refrigerator, so you can confidently prepare it in advance.

Bell pepper (red and green) - 2 pcs.
Garlic - 5 clove
ground coriander - 1 tsp
Ground red pepper - ½ tsp
Ground paprika - ½ tsp
Drinking water - 750 ml
Sugar - 170 g
Salt - 75 g
Apple cider vinegar 6% - 200 ml
Refined vegetable oil - 150 ml
Coriander seeds - ½ tsp
Seasoning Mix of peppers - ½ tsp
Sweet peas - 3 pcs.
Bay leaf - 3 pcs.

Clean the white cabbage from the top darkened or dirty leaves, if there are any. Cut the cabbage into thin strips and transfer to a deep dish.
Wash the bell peppers of different colors, remove the seeds, and slice them into thin half-rings. Add the peppers to the cabbage.
Wash the carrots, peel them. Chop the vegetables into thin long strips using a fine grater. Add the carrots to the vegetables.
Peel the garlic cloves, slice them thinly. Add the chopped garlic to the rest of the ingredients.
Thoroughly mix the ingredients so that the vegetables release their juice.
For sharpness and aroma, add ground red pepper, paprika, and coriander to the vegetables.
In a bowl, mix salt, sugar, and spices.
Pour purified water, 6% apple cider vinegar, and refined oil into the marinade. Stirring to ensure the sugar and salt are fully dissolved, bring the marinade to a boil.
Immediately after boiling, pour the marinade into the vegetable mixture. Stir the ingredients with a spoon. Under the influence of the hot marinade, the vegetables will decrease in volume and be completely covered with brine.
Cover the appetizer with a lid and place it in the refrigerator or a cool balcony for 24 hours. Stir the vegetables several times during the marination process so that they are evenly soaked with the spicy marinade and spices.
In a day, the delicious and crunchy "Provencal" cabbage will be ready. For convenience, transfer it together with the marinade into glass jars with a tight lid and store in the refrigerator. Serve the marinated "Provencal" cabbage as a cold appetizer. Enjoy!
