Wash the potatoes, peel them, and cut into slices 1 cm thick. Transfer the vegetables to a deep dish, drizzle with oil, sprinkle with salt and seasoning for potatoes.
Mix the vegetables so they are evenly coated with oil, salt, and spices. Place the potato slices in an ovenproof dish greased with oil. Bake the vegetables in a preheated oven at 200 degrees for 12-15 minutes until done.
Wash the beets, boil until ready, and cool to room temperature. Peel the vegetables and grate them on a coarse grater. Add mayonnaise, some salt, and ground black pepper to the beets, and mix.
For lightly salted herring, cut off the head, tail, and fins. Remove the guts and black membranes, and separate the fish into fillets. Peel the herring from the skin and bones. Cut the fish fillet into serving pieces 2-3 cm wide.
On a flat plate, lay out slices of baked potatoes that have cooled to room temperature.
Place the beet mass on top.
Place pieces of fish on top of the vegetables.
Complete the appetizer with rings of red onion and French mustard. Garnish the herring canape with dill greenery.
Serve the beetroot and herring appetizer with potatoes immediately after preparation.
