For chakhokhbili: blanch the tomatoes in boiling water, carefully peel off their skins, and dice the flesh. This will give the dish a tender texture.
Cut the chicken into serving pieces and pan-fry until golden brown. Add the julienned onion, minced garlic, chili pepper, and prepared tomatoes to the chicken. Simmer everything together over low heat for 5-10 minutes to allow the flavors to meld.
Finish cooking by adding spices: salt, freshly ground black pepper, and fragrant khmeli-suneli. The final touch is fresh cilantro, basil, and parsley leaves, which should be added to the pan for only 2 minutes. Serve chakhokhbili hot with wheat tortillas. Enjoy your meal!
Begin by preparing the dough for the flatbreads: sift the flour through a sieve, then add salt and sugar. Dissolve the dry yeast in warm water, then combine it with the flour and knead into an elastic dough, incorporating the vegetable oil. Wrap the dough in film and leave it in a warm place for 40 minutes to rise and become fluffy.
Once the dough has risen, roll it out into thin flatbreads. Brush each flatbread with vegetable oil and bake in an oven preheated to 250 degrees Celsius for 5-10 minutes, until golden brown.
