Thaw the pollock fillets, rinse them thoroughly, and gently pat them dry with a paper towel. Peel and wash the onion. Preheat the oven to 180°C. Prepare a baking dish by lining it with parchment paper.
Slice the onion into thin half-rings. Grate the cheese.
Season the fish with salt and pepper, then generously drizzle with fresh lemon juice.
In a parchment-lined baking dish, spread a layer of onions, then carefully arrange the prepared fish on top.
Generously coat the fillet with the sour cream sauce, then place the fish in a preheated oven for 15 minutes.
Sprinkle the dish with grated cheese. Return the dish to the oven for another 15 minutes, allowing the cheese to melt and form a golden crust.
