Begin by preparing the ingredients: carefully remove the stems from the sorrel and tear it into smaller pieces. Finely chop the fresh parsley. Peel the onion and slice it into thin half-rings. Cut the frying sausages crosswise into pieces about 2 cm thick. Grate the suluguni cheese on a fine grater so it melts easily into the dish.

In a deep bowl, whisk the eggs with a pinch of salt until smooth. While continuing to whisk, gradually pour in the cream and add the grated suluguni. This mixture will form the base of your delicate frittata.

Preheat the oven to 160°C. In a large, oven-safe skillet, melt the butter. Add the chopped onion and sausages to the skillet and sauté over medium heat for 5 minutes until golden brown. Pour the cheese and egg mixture into the pan with the sautéed ingredients. Gently stir to ensure all ingredients are evenly distributed.
