This zucchini spread is so delightful that it can be enjoyed on its own or as a sophisticated topping for toast. Begin by preparing the vegetables: thoroughly wash the zucchini, peel the onion and carrots.
Finely chop the onion and sauté it in vegetable oil for a couple of minutes until golden brown. Then grate the carrots on a coarse grater and add them to the onion, continuing to fry for another 3 minutes. Shred the zucchini into thin strips, add it to the vegetables in the pan, and cover with a lid. Simmer everything together for about 10 minutes until the vegetables are tender and fragrant.
Remove the lid from the pan and allow any excess liquid to evaporate completely. Afterwards, transfer the sautéed vegetables to a blender and process them until a smooth purée is formed.
Add soft cream cheese to the chopped vegetables. Blend again until creamy, then season with salt and pepper to taste and mix thoroughly.
Serve this delightful spread generously on crispy crackers or slices of toasted baguette. Enjoy every bite!
