Break the eggs into a deep bowl, add sugar and salt. Whisk all ingredients thoroughly with chopsticks until smooth. Heat a non-stick pan over medium heat, lightly greasing it with vegetable oil.
Pour the egg mixture into the heated pan. Cook for approximately 1 minute, stirring continuously and rapidly with chopsticks, gathering the egg mixture from the edges towards the center. As soon as the eggs begin to set around the edges, gently roll the omelet into a loose cylinder using the chopsticks. Flip the roll seam-side down and fry for another minute to ensure the omelet is fully cooked through.
Transfer the cooked omelet to a plate and allow it to cool. Once cooled, cut the omelet into neat strips, 6-7 cm long and 1.5-2 cm thick. Serve as a standalone dish or use for preparing temaki-zushi.
